12 slices of cured ham well
½ Kg. Of shelled beans
½ Kg. Of shelled peas.
¼ Kg. Of spinach
1 bowl of flour
10 saffron threads
Cook the beans and peas with salt, drain and keep the resulting broth.
Cook the spinach separately and chop finely.
Spread on slices of ham put beans, peas and cooked spinach and roll up the slices.
Coat the rolls in flour and egg and fry in very hot abundant oil and place in a bowl.
Remove some of the oil remaining in the pan and add to it a tablespoon of flour, stir well and add the broth and saffron, leaving the fire a few minutes until desired consistency.
Add this sauce to the rolls of ham and serve.
