½ Kg. Of mushrooms
200 g. Manchego cheese
1 small red onion
1 cup liquid cream
ground black pepper
1 pinch of saffron
Thoroughly clean the mushrooms and cut or chop very fine.
In a frying pan with a little oil, brown the chopped onion.
Add to the pan the mushrooms and saffron and guisarlas, season and add the cream. Once reduced, add the diced cheese.
After a few minutes add pepper to taste.
Finally pass through the blender and stored in jars, to consumption, in the refrigerator.
